~ Menu Plan Monday ~

It seems that I never totally stick with my menu plan because life seems to happen and I have to change my plans. We ended up eating out to celebrate a child placing in a local art contest on Friday evening (after the awards ceremony) and then both my husband and I were under the weather on Saturday, so we just did a “clean out the fridge” night! But here is what I have planned for this week, barring any major catastrophes – ha! I know that my menus may seem fairly plain to many, but we are a gluten-free dinner family and so I tend to just fix a lot of easy meat and veggie meals, which also means they are pretty easy on the budget, as well!

Monday – Crockpot fruited chicken, brown rice, broccoli

Tuesday – Meatloaf, homemade macaroni & cheese, green beans

Wednesday – pork roast, mashed potatoes, peas, fried apples

Thursday - leftover night

Friday – steaks, baked potatoes, salad (this was moved from last Friday)

Saturday – clean out the fridge night  -OR- roast w/potatoes and carrots

Sunday (my parents here for dinner) - baked ham, pork and beans, sweet potato, green beans

If you’d like any of the recipes above, just ask and I’ll post them! One of our favorite dishes is homemade macaroni and cheese … my kids won’t eat the instant box variety!
