Homemade Brown Sugar

July14

In September, we will be working on an emergency preparedness Digest and I am really excited about this one. Our kitchens can also be a place for being prepared, if we have all the right ingredients on hand. I have a list of essential pantry ingredients that I will be sharing in that issue that will allow you to be able to make many things at home without having to run to the grocery store.

So with that thought in mind. . . .

Here is a tip I thought you all might like to know. Did you know you can make your own brown sugar if you have molasses and regular granulated sugar on hand?

Ingredients

1 cup of granulated sugar

1 tablespoon of molasses

Directions

Measure sugar and molasses into a mixing bowl. Stir with a fork until completely mixed. Your brown sugar is now ready for use! Store in an air tight container, in a cool, dark, place until ready to use.

Makes 1 cup.

Tip: If you want to make a darker brown sugar, just increase the molasses to two tablespoons.

Being prepared in the kitchen works for me!

I’ve done this before and it really works. There’s nothing more frustrating than wanting to make chocolate chip cookies and finding out you’re out of brown sugar! (Okay, there are a lot of things more frustrating.)
I wonder if other people are like me and have no idea why they bought molasses in the first place?

We tend to use this recipe in the bowl so to speak. So, when making cookies, we add the sugar with the butter and then add the molasses with the eggs (or whenever other wet ingredients are added). Works great!

Of course if you’re just baking with it, you don’t need to mix them up first. ;)

Molly says: You know, I probably wouldn’t even have thought of that! DUH!

Any suggestions for getting white out of brown? I have plenty of brown right now but because of jelly making am almost out of white!

Molly says: lol Well, that may be a whole ‘nother issue!

Well brown sugar I believe is simply white sugar that hasn’t had all the molasses taken out of it….. Molasses is a by product of sugar….. If I remember the How It’s Made episode correctly, the raw sugar is placed in a spinning tub of some sort, and they spin the molasses out of the sugar….. brown sugar doesn’t spin as long…. then the white sugar is bleached to look ‘right’ to the customers.

Living in a third-world country, we have been making our own brown sugar for years. My method: In a Kitchen Aid mixer, combine 5 cups of white sugar with 1/4 cup molasses (or black treacle). Mix with paddle attachment. I’ve also used a food processor, but the mixer is faster and easier.
