Once again, my menu plans have changed from what I had originally planned. Yesterday, my son asked me to fix a roast chicken and potatoes for dinner and I was happy to oblige him! We also still have enough soup leftover from last week for a “clean out the fridge” night tonight. So, I am having to make some adjustments this week, but this is what I have come up with using the “rubber chicken” method – cook a whole chicken once and eat several more meals from the leftovers!
Feb 1 – 7
Sun – roast chicken and potatoes, steam veggies, applesauce
M- soup night from the fridge
T – chicken stirfry over rice
W – homemade chicken & rice spaghetti noodle soup (made from leftover chicken and chix broth, mini carrots, celery), rolls or GF hearty grain bread
TH – leftovers
F – spaghetti, salad, corn
Sat – leftovers or something simple from the pantry
I bet I’ll be changing up next week’s menus, too! That is one good thing about having a full pantry – there is always enough food to make changes at the last minute!

Molly responds: This is actually a mix from Bob’s Red Mill – it looks and tastes like Pumpernickel bread!
