Menu Plan Monday

Today begins my first week of the pantry challenge and I’m already having to adjust the menus that I had planned. However, that is one benefit of having lots of food already in the house! Here was my original menu that I had planned to use this week.

Mon 1/26 – 31
M- Baked spaghetti, rolls, Steamfresh peas
T – Catfish, SteamFresh veggies, applesauce/fried apples
W – Ham and beans, cornbread
TH – Fruited chicken, baked potatoes, SteamFresh veggies
F – Beef and broccoli, brown rice, sweet potato
Sat – leftovers

… and here is the menu that I now have planned based on leftovers in the fridge and meat that I thawed, but didn’t use late last week:

Mon 1/26 – 31
M- Crockpot Beef & Sweet Potato Stew , cornbread
T – Catfish, SteamFresh veggies, baked potatoes
W – Ham and bean soup, homemade rolls
TH – (adults out to dinner with friends) – Kids: Ham slices, SteamFresh veggies, applesauce/fried apples
F – Baked spaghetti, salad, Steamfresh peas
Sat – leftovers

I went through the grocery sale circulars yesterday and wrote down the items that I need to purchase for the next few weeks. The hard thing to do is to NOT buy items to stock up my pantry because I am so used to doing that! I’m limiting myself to $50 MAX weekly for groceries during this 5-week challenge and we spent about $19 this weekend on some needed items, so I have to go through my list and decide how to spend the other $31.
