Simple Breakfast Dishes That Also Freeze Well
After my husband and I first got married and we both worked full-time outside of our home, we used to spend a small fortune on breakfast. We’d either stop for fast food on the way to work, or heat up some almost equally expensive frozen breakfast items.
After I decided to stay home with our daughter, we had to cut back quite a bit and convenience foods, including those breakfast items were one of the things we had to start living without. Since we still had to eat and all of us like a warm breakfast, I had to get creative. Today I thought I’d share some of my favorite breakfast items with you that also happen to freeze well.
Pancakes and Waffles
The first idea is so simple; I couldn’t believe I didn’t think of this earlier when I came across it. Make a double (or triple) batch of your favorite pancake or waffle batter on the weekend. Cook all your pancakes waffles and enjoy the last few with your family for breakfast. In the meantime allow the rest to cool.
After breakfast, spread your pancakes or waffles out on a cookie sheet (I like to line it with wax paper) and stick it in the freezer. After 30 to 45 minutes your breakfast items should be frozen solid. Move them to a freezer bag for permanent storage. The frozen waffles can go straight to your toaster; the pancakes are heated either in a dry skillet or in the microwave. Grab the syrup and a hot cup of coffee and breakfast is ready. Muffins
Just like the pancakes and waffles, you can make muffins in large batches. You can usually fit two muffin pans in the oven, so why not invest in a second muffin tin and start making double batches of your favorite muffins. Allow them to cool completely, then stick them in freezer bags and freeze. When you’re ready for a warm muffin, take one out and allow it to defrost on the counter. Stick it in your toaster oven or the microwave to warm up and enjoy.

Burritos
My husband loves a hardy meal in the morning and breakfast burritos work out perfect. They are easy to make and freeze ahead of time and also portable if he’s on his way out the door. Cook up some of your favorite breakfast burrito filling. We like scrambled eggs with ham or bacon. Egg and sausage is good as well. Place it in the middle of the tortilla. Add a little shredded cheese if desired and fold up.
Wrap your burritos in wax paper and stick them in a freezer bag. When you’re ready for breakfast, remove a burrito from the freezer and take it out of the wax paper. Place it on a microwave save plate and cover it with a damp paper towel. Microwave for 2 minutes or until the burrito is heated through.
