Baked Apple Pie Oatmeal

I received this recipe in my email inbox this week from Gwen Peters. I was immediately drawn in because I LOVE apples and oatmeal both. I have never baked oatmeal before so I cannot wait to try this. Hope you enjoy! Thanks Gwen for sending this recipe in.

We bake oatmeal every Sunday morning.  I like to prepare this the night before.  I often throw in all sorts of flavors to try, but I tried this the other week and my kids thought it tasted like apple pie and loved it!
Ingredients 
1/2 cup butter
1/2-1 cup brown sugar
1 cup milk
2 eggs
3 cups dry oats (rolled, quick, or other)
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
2 apples, cut up, skinned or otherwise
 
Directions
  1. Melt butter.
  2. Stir in brown sugar. 
  3. Stir in the milk.
  4.  Add the eggs. 
  5. Put in the dry oats and all other dry ingredients, then stir in all together. 
  6. Add the vanilla and fold in apples. 
  7. Pour it all into a greased 8″ square or 9″ pie pan.
  8. If you’ve made it the night before, cover and put in the refrigerator.  When ready to bake, put it in the oven and turn it on to 350. 
  9. Bake for 25-30 minutes or until it’s medium brown and set in the middle. 
  10. Serve warm with cream or milk.
