“Superfoods” Breakfast, Lunch & Snack Ideas

Although I’m working this month to lower the amount of money I’m spending on groceries, I am still going to work to provide my family meals using as many superfoods as possible. Here are the breakfast and lunch ideas that I’ve worked on recently. I must preface this list by saying that the lunch ideas are more for me than the kids. They prefer sandwiches, some chips and fruit. I will use whole wheat or whole grain bread for their sandwiches and buy the nitrate/preservative-free lunch meat, etc.

~ BREAKFAST IDEAS ~

 

 

  • One omega-enriched egg
  • ½-cup gluten-free oatmeal with ½-cup frozen blueberries, 1 cup soy milk, 1 Tbl ground flaxseed, ½-1 oz walnuts and sprinkled with cinnamon
  • antioxidant-rich pomegranate/acai berry/blueberry juice or a cup of kefir
  • One gluten-free oatmeal pancake topped with homemade blueberry or chunky apple sauce and a little honey or 100% maple syrup
  • 1 omega-enriched egg
  • green tea (hot or cold) sweetened with a little honey
  • 1 cup plain or low-sugar yogurt; add berries, walnuts, cinnamon and flax seed
  • homemade whole grain pumpkin muffin or slice of pumpkin bread
  • ½ grapefruit and drink the juice leftover
  • Fruit & Yogurt Smoothie. Here’s how I make mine. I dump one container of low-sugar yogurt into the blender. Then I fill the now-empty yogurt container with milk and pour into blender (I like to use vanilla soymilk). Then I add ½-1 cup of frozen berries and 1 Tbl. Ground flax seed. Blend. Sometimes, I add some ice cubes to make it thicker.
  • French toast made with whole-grain bread, omega-enriched eggs and topped with berries
  • One cup kefir or yogurt
  • A quarter of canteloupe

~ LUNCH IDEAS ~

  • Tuna fish on leaf salad w/veggies from list and olive oil-based dressing
  • Whole grain crackers, optional
  • Apple
  • Green tea
  • Chicken salad sandwich- whole grain bread, lettuce, tomato, etc.
  • Sweet potato fries or a small baked sweet potato
  • Serving of fruit
  • Milk or tea
  • Bean soup
  • Pumpkin muffin
  • Red grapes
  • Milk or tea
  • Baked chicken spinach salad; add grapes and dried cranberries, olive oil-based dressing
  • One pear sprinkled with cinnamon and walnuts
  • Drink of choice
  • Leftovers from dinner
  • Chicken fajitas or ground turkey tacos w/whole grain tortillas, avocado and veggies from the list; top with homemade salsa (tomatoes, onions, etc.)
  • canteloupe
  • Can add garbanzo beans (chickpeas), blueberries and other fruits to salads

~ SNACK IDEAS ~

 

 

  • 1 oz nuts
  • yogurt with various toppings added in
  • serving of fruit or fruit salad (blueberries, strawberries, canteloupe, pineapple, etc)
  • dark chocolate

    Did you know you can bake garbanzo beans and toss with a little bit of sugar and cinnamon for a tasty little snack? I made them one time at our old house and they were very good – even my toddler enjoyed them.

    I make a fruit/yogurt smoothie too sometimes for breakfast….
    here’s mine
    1/2 container lowfat yogurt (u pick flavor-I like strawberry)
    1/2 banana (good way to use up bananas- freeze them for this)
    3 frozen strawberries
    1/2 -3/4 cup milk
    put all in magic bullet mug
    fill to top with ice
    Add sweetner if you like
    Blend well
    I add fiber supplements or wheat germ to mine sometimes.
    Yum!
